March Recipe Picks!

Well here I go trying to be creative again! Once upon a time back in 2019, I was a grad school student looking for a creative outlet and then life changed. In the infamous year of 2020, work life in my field stood on its head, spun, and started breakdancing! As you may have gathered from looking at my Instagram profile, I work in healthcare and in the past year I got to see what being an essential worker was all about. Doing this all the while completing capstone classes for an MBA degree, how many ways can you call that crazy? Long story short, I'm trying to blog again. As this little pastime project seems to bring so much peace and focus into my life. I obviously love baking/cooking as it pertains to healthy eating. So in order to keep in theme with the month of March and all things green, I dedicated this past month of 2021 to green colored healthy foods! First up is one of my all time favorites! Green Power smoothie
There are so many variations of this mix and I drink one every afternoon. It's packed with nutrients and other fat burning ingredients, it's quick and simple and will suffice the needs of that sweet tooth too!
Ingredients: ½ Cup strawberries ¼ Cup mango chunks ¼ Cup blueberries 1 Whole cup of spinach 1 tsp of Cinnamon 1 tsp of Cayan pepper (for that afternoon metabolism boost!)
You can always adjust the amount of Cayanne pepper if you have a sensitive pallet and want to sweeten it up for a healthy treat! It also makes a cute Instagram pic if you pair it with your multivitamins ;)
Avocado Egg Salad! I made this for a Sunday afternoon back porch brunch and really loved it on some Gluten free toasted bread. I only used three eggs with my portions since I only made this for one. Matts not a fan of egg salad so I can’t blame him for not wanting to try it 😉
Ingredients: 2 Avocados 3 boiled eggs (separating yolks) Mustard Fat Free Hellman’s Mayonnaise Oregano Seasoning
I love recipes where you just throw everything into a bowl, mix and scoop to serve! I didn’t measure out the mustard or seasoning, I just applied to taste. I’m a big fan of mustard so my dab of it was pretty generous. Not as generous as the Mayonnaise as you can see 😉 For this recipe I applied probably ¼ cup of fat free Mayonnaise and that amount provided more than enough flavoring!
Now how pretty is that? I love a recipe that turns out as good as it tastes! These two slices were enjoyed individually so I wouldn’t have any leftover salad. We all know from experience that avocado doesn’t make a good left-over dish so that’s another good reason to prepare this in a small serving. This was GREAT and I highly recommend for a Sunday brunch at home. Green Smoothie Muffins! Yes I’ve made these before…..I am guilty and not sorry. If I’ve taken the time to bake a recipe more than once, you can believe it’s really good especially if it coincides with a post!
Ingredients: 2 Ripe Bananas 2 Eggs 4 oz fresh spinach 1 ½ Cups of self-rising flour 2/3 Cup of honey 1 tsp of Vanilla ½ tsp salt I’ve never utilized my blender for baking until I found these muffins! I’m sure you could mix things up in a bowl but I think it’s easier using the blender with the chunks of bananas. Plus it’s much more fun! All you have to do is add all measured ingredients into the blender and press start!
With all ingredients combined and blended, my recipe filled up 8 muffin tins. You could place papers in the tins to prevent sticking but I’m preferable to using the pam spray 😉
Once these beauties have baked at 375 for 15 minutes, they were very puffy, firm and baked all the way through!
They turned out perfect and slid right out of the muffin tins with no problem! I love these because they’re the perfect combination of sweet and savory and also make a wonderful on the go breakfast carb.

Easy until it isn't - Part 2

November brought about another challenge that had been at least eleven months in the making. If you Google BII (breast implant illness), you will see several articles and YouTube videos come up about women who are electively choosing to have their cosmetic breast implants removed. Remember those vision distortions I mentioned earlier that happened in Richmond? This along with migraines, were a new phenomenon I was experiencing ever since I had decided to get cosmetic surgery in February of 2019. I was having them at least twice a week and on a typical day of getting one, I could expect to be out of commission and unable to work from 20-30 minutes at a time until my vision would come back. Looking at my phone, computer, TV’s or monitor devices at work were absolutely out of the question and a few times while working on inpatient studies in the hospital, I would have to take a long break to go for a walk or just sit in the staircase with my head in my hands until I could see again.
